Everything is better wrapped in Bacon…, just had an an elaborate discussion this morning with an Italian friend on whether it is better to use bacon or panceta for pasta Carbonara. We agreed it does not matter – Both are pork belly at the end of the day…
@Adi: Everything is better with bacon. And everyone should have an Italian friend — mine says it’s not bacon or pancetta that goes in carbonara, but rather pork cheek (guanciale). Hard to find, but worth the hunt.
